The Philippines is an emerging tourism destination in Asia. In the last decade, the country’s tourism industry has experienced significant growth in terms of international tourist arrivals and visitor receipts. While sustainable tourism has been institutionalised as a motor for national development, several issues challenging the sustainability and inclusivity of Philippine tourism exist in many destinations in the country today. This introductory chapter provides an overview of the contemporary management issues in Philippine tourism development. The discussion of these issues then articulates the intention and position of this volume. This chapter ends by outlining the intention, parts, and contributions in this volume.

Bachelor of Science in Hospitality Management (BSHM)

The Bachelor of Science in Hospitality Management is a ladderized program that prepares students to have employable skills/competencies at every academic year level for them to be competitive in the hospitality industry locally and globally.  This also prepares the students to be entrepreneurs. This curriculum includes laboratory experiences as well as local or international internship requirement in the industry.

Job Targets

Students meeting all the requirements for one year will be given a Certificate in Hospitality Management Program; for two year completion, the students will receive an Associate in Hospitality Management Program and upon completion of the three year program, the students will be granted a Diploma in Hospitality Management.  Additional certification will be given each course when students pass the national skill certification given by the government.

Program overview.

The Bachelor of Science in Hospitality Management (BSHM) is a four-year degree program that covers the process of conception, planning, development, human resource and management of the different aspects of the hotel, restaurant, and resort operations. The program provides students with technical skills, as well as knowledge in marketing, finance, budgeting, staffing and other fields of business. The program also aims to teach entrepreneurship skills. 

Recommended Senior High School Strand

Students who want to pursue a degree in Hospitality Management are encouraged to take the Home Economics strand under the Technical-Vocational and Livelihood (TVL) track. The strand covers interesting topics like beauty and wellness, cooking, fashion designing, tourism, hospitality, and handicrafts. These topics are helpful to incoming college students as it teaches the basics of their degree program.

Admission Requirements

Qualifications

  • The student must be a high school graduate. 

However, if they were not able to graduate high school, they may opt to take the Alternative Learning System (ALS) and pass the Philippine Educational Placement Test (PEPT) to qualify for college; the availability of courses for PEPT passers depend on the university.

  • The students must pass the College Admissions Test of the university.

  • Recommendation letter from High school principal and guidance counselor
  • Most recent medical and dental health record
  • Copy of NSO Certified birth certificate
  • Certificate of Good moral character
  • Copy of honorable dismissal

Program Outcome

Graduates of Hospitality Management are expected to be able to:

  • Comply with enterprise standards when producing food products
  • Apply skills in management in food and beverage service and operations
  • Provide a full guest cycle services for guests
  • Implement a risk management program to maintain safety and security in the workplace
  • Provide food and beverage services based on industry standards

On-The-Job Training/Internship

During the fourth year of the program, students are required to attend an On the Job Training (OJT) in hotel, resort, events management companies, and travel and tour companies or agencies.

Students are given the opportunity to apply their knowledge and skills in an actual work setting. Usually, universities require them to submit a written report on their tasks, learning experiences, and hours rendered. Their work performance will also be evaluated by their immediate managers and will be submitted to their respective OJT coordinator. The number of hours required may differ in each university.

The BS in Hospitality Management does not have a board examination. However, graduates may opt to take the Civil Service Examination (CSE) conducted by the Philippine Civil Service Commission (PCSC) to qualify in working in government offices. Some graduates opt to take a Master’s degree followed by a Doctorate degree to gain expertise in the industry.

Tracer Study of BS Hospitality Management Graduates of Pangasinan State University, Lingayen Campus for S.Y. 2015-2019

This study was intended to conduct a tracer study of BS Hospitality Management graduates of Pangasinan State University, Lingayen Campus for S.Y. 2015-2019. Quantitative descriptive design was utilized in the study. In gathering significant data, survey questionnaire was used thru Google Form and facilitated in social media. Researchers made use of appropriate statistical tools in analysing the data to secure substantial results and findings such as frequency and percentage. Salient findings of the study disclosed that majority of the graduates are employed in the Philippines and landed on jobs related to hospitality management. Recommendations include fortifying PSU Alumni Programs thru linkages and partnerships to stakeholders.

This study aimed to determine the employability of the graduates of Bachelors of Science in Hotel and Restaurant Management of one State College in the Philippines. Descriptive quantitative design was used in this study. This study found that majority of graduates are successfully employed locally and internationally, but only few are working internationally because of extreme qualification and ample requirements. Majority acquired their first job in less than three months. Ironically, the graduates still had a struggle or difficulty in finding a job because of few job vacancies or lack of position or item. Most of them are working in the hotels and fast food stores. Most of them also have their jobs relevant to their field of expertise and are regular employees. Majority of them receive a gross monthly salary of ₱5,000 to less than ₱10,000 which may not be really and practically enough, especially for those who have family dependents and other special responsibilities. The place whether local or international, position, and type of company are factors to the type of salary the employee will receive. Those who work internationally receive more than those who work locally or in the Philippines. All of the skills (i.e. entrepreneurship skills, knowledge and technical skills, management and critical thinking skills, oral and written communication skills, human relation skills, problem-solving skills, and information technology skills) are believed to have been useful, helpful and relevant to their current employment.

The alumni are known to be the best proof of a program's success in terms of jobs and roles held. Also, a strong source of input on the importance of the program of the Hospitality and Tourism management including the two-year course program (AAHM). This research was performed to assess the employability of the HM/TM and AAHM programs' graduates and also to collect feedback that could be used to enhance the quality of its education. The respondents are graduates of 2015-2019 and were identified using descriptive statistics. A guided questionnaire was used to gather data. Significant findings of this study indicate that 59% were employed wherein the status is subdivided into permanent, temporary, contractual, casual and job orders status in the different government and private business establishments. There are 16.2% who are self-employed and most are online entrepreneurs. It was also found out that most of the online entrepreneurs are involved in selling and baking of products which shows the same interest and a practice of the skills learned. Thus, showing that the graduates of both programs can easily find job aligned to their field of specialization as it was supported by the 59% who are employed.

Ascertaining graduates' employment rate is one of the factors to consider in achieving the institution's vision and mission. Thus, researchers evaluated the employment status of BHRST graduates of the Bohol Island State University-Candijay campus from Academic Year 2015-2018 using mixed methods deploying a modified CHED Graduate tracer questionnaire. Findings revealed that most BHRST graduates are employed after graduation in hotel and restaurant business and landed their first job from one to six months as walk-in applicants in the Philippines. Salaries and benefits are the primary reasons for accepting or leaving their job, wherein P 5,000.00 to less than 10,000.00 are their majority initial gross monthly earnings. Lastly, it was perceived that communication skills and human relations skills are the beneficial competencies they learned from BISU and the OJT curriculum gives them an advantage for work.

This research study aimed to determine the employability of Hotel and Restaurant Management graduates of academic year 2017-2021 from Guimaras State College, Philippines. The study made used of the descriptive method. The quantitative method used survey questionnaire to gather data from two hundred thirty-six (236) graduates composed of 95(39.83%) HRST, 61(25.85%) BSHRM and 81(34.32%) BSHM. The data gathering instrument used by the researchers is the modified Graduate Tracer Study from the Commission on Higher Education (CHED). Snowball sampling technique was employed. Out of the 236 graduates there were 200 (84.75%) who were employed. Findings shows that there is equal opportunity among students enrolling in the HRM program was enjoyed by the graduates regardless of their sex and civil status. Majority of the HRM graduates were currently employed locally to HRM related jobs however, there are some who were underemployed and unemployed. In addition, there was a high employability rate among HRM graduates of Guimaras State College.The suggestions to further improve the curriculum concentrated mainly on classroom standards, teaching methods, career guidance activities, and facilities and equipment. To improve the classroom teaching methods, more industry exposures/actual training gained favorable responses while posting of job opportunities on bulletin boards and social media and providing computers with reservation software are also suggested.

Objective: A postgraduate degree is an advantage to obtaining a higher position, although not a requirement. In line with this, this paper is of great importance as this study assesses the correlation between academic performance and work performance among the graduates of master's in international hospitality management. Method: A descriptive-correlational method was used among the total population of 40 graduates (2016-2020) utilising an adapted instrument from Koopmans et al. (2014). all data were treated using a statistical software known as PASW version 26 to further interpret the result of the study using an alpha level of 0.01 and having the following statistical tools: frequency and percentage distribution, Weighted mean and rank, Analysis of Variance and Pearson R. Result: Based on the result of the study, graduates were on the average level in terms of academic performance as to the comprehensive exam, and only 12.5 per cent were recipients of the Award of Academic Excellence. On the other hand, with regards to work performance, it was confirmed that graduates always manage to excel in the task and contextual performance. Conclusion: It was revealed that there is no relationship between academic and work performance statistically. Recommendation & Implication: It was recommended to the MIHTM program to further enhance the curriculum by creating an activity that would boost the collaborative and relating skills among Research Papers

This research aimed to describe the employability of the tourism management graduates of Northwest Samar State University (NwSSU), a state university in the Philippine Eastern Visayas Region. To achieve the desired result, the study employed a descriptive research design. The researchers extensively employed the Commission of Higher Education (CHED) Graduate Tracer Survey questionnaires to gather the needed data from the tourism management graduates of the university from SY 2011-2012 to SY 2014-2015. To analyze and interpret the collected data, the researchers made use of frequency counts, percentage distribution, ranking, and the stepwise multiple regression analysis. The majority of the tourism management graduates under study were female, single, young, and city-residents. Most of the tourism management graduates under study were employed immediately after graduation in rank-and-file positions. The best predictor of the employability of tourism management graduates was their location of the residence. With these, the employment support system of the university may fully activate in the first 6 months after graduation in tourism management. To improve further the employability of tourism management graduates, the OBEdized curriculum in tourism management may include the strong emphasis on communication and human skills trainings on all subjects offered.

Every higher academic institution in the Philippines is geared towards the delivery of quality higher education to its clientele alongside various academic thrusts like research, extension and among others. The study is conducted to trace the employability status of the BSBA marketing management graduates of Palawan State University Coron campus from the school year 2018-2020. A quantitative research methodology was used in the study utilizing the standard tracer study questionnaire form of the Commission of Higher Education (CHED). The study was conducted on all twenty-eight (28) BSBA marketing management graduates of PSU Coron and was conducted through a combination of face-to-face and online interviews. The findings revealed that most graduates are female, unmarried and regular or permanent employees. The majority of the respondents work in the retail and wholesale trade located primarily in the Palawan province. Most of the participants are employed in rank-and-file or clerical positions whose monthly incoming ranges from P5000-P10,000. Ultimately, communication skills were the competencies gained by the graduates that are useful to their present jobs. It can be inferred that the BSBA marketing management graduates are currently employed and enjoying the corporate industry. The knowledge and skills they have gained from the university significantly improve their competence. Thus, the researchers recommend conducting a follow-up tracer study of the program to continuously assess the employability status of the graduates and propose measures to improve the curriculum of the program.

Courses Offered

Bachelor of science in hospitality management.

The Bachelor of Science in Hospitality Management (BSHM) core comprise the General Education (GE) courses prescribed by Commission on Higher Education (CHED) including much needed environment sustainability and food safety courses. The core management courses which include, accounting, basic Management and Marketing, Finance, Human Relations, Business Communications, the HM subjects in Rooms Division, Tourism, Materials Management, Food and Beverage Bar Management, Food and Beverage courses, Entrepreneurship, Facilities Design, Legal Aspects and the Professional courses under each specialization. Teaching learning methods hone competencies both for local and overseas employment. Language courses further propel the graduates in a market driven, customer service oriented global hospitality industry. All the specializations are replete with “hands-on” experiences in the school laboratories, field work and on the job training with prestigious industry partners. Careers for the graduates are diverse and fill the manpower needs of establishments or institutions concerned with rendering accommodation and food services to people away from home. Graduates can fill up much needed requirements for faculty in the many schools offering hotel and restaurant or related programs, likewise for entrepreneurship of related business because of their strong management/business courses.

BSHM course is available in Expanded Tertiary Education Equivalency and Accreditation Program (ETEEAP) where PWU is one of the institutions deputized by the CHED.

Bachelor of Science in Hospitality Management with Specialization in Cruise Line Operations Management

BSHM – Cruise Line Operations Management Specialization (a newly revised curriculum) is designed to prepare adventurous and sturdy students for a successful career in the exciting world of cruise liners. Aside from the HM skills in front office, food and beverage, communications, customer service, technology skills, the new curriculum develops the professional requirements of knowing the nature of cruise ship operations, work in a multicultural environment, wider issues on personnel, organizational behavior, security, safety and crisis management as well as cruise ship destinations and marketing. On-the-Job Training (OJT) onboard ship caps the training enabling the student to discover how operations are conducted on board the ship and grounds the students on the reality aspects of the job as well as motivate him further on the cruise ship profession.

Aligned with the legacy of PWU, all the specializations are implemented in an environment of training for social sensitivity, ethical professionalism and a deliberate advocacy for cultural heritage and the county.

Bachelor of Science in Hospitality Management with Specialization in Culinary Management

BSHM – Culinary Management Specialization equips the graduates with the culinary knowledge and skills in the traditional culinary discipline plus the competence in the management or business subjects. The new culinary curriculum has recently been evaluated and revised to add subjects like Gastronomy, Filipino Innovative Cuisine, French Cuisine, Asian Cuisine, Trendy Cuisine for a more global and trendy flair. Graduates are sought after as executive chefs and specialty chefs in hotels, restaurants and food services, and celebrity chefs or culinary writers.

Bachelor of Science in Hospitality Management with Specialization in Hotel and Restaurant Management

BSHM – Hotel and Restaurant Management Specialization enables graduates to use the technical skills of HM, and together with the management competencies, develop their abilities for critical thinking, decision making, initiating innovative strategies in the management of hotels and restaurants. New courses are in Fast Food Operations, Accommodations Management, and Legal Aspects in HM. Career paths start from staff to supervisorial, middle management to managerial positions in hotels, restaurants, bars, other food services, resorts, holiday centres, fast food enterprises, industrial, educational, hospital and health care services as well as all types of transport catering.

Master of Science in Culinary Arts

The Master of Science in Culinary Arts is a very timely program in the Philippines today since recent years have seen the surge of many culinary schools offering short term or baccalaureate degrees. There is a continuing scarcity of qualified faculty to teach in culinary schools. They must comply with the mandate of the Commission on Higher Education (CHED) requiring all higher education institutions (HEI) to align faculty with the appropriate master’s degrees. This situation has made the offering of the Culinary Arts program at PWU very relevant and strategic in meeting both the needs of the HEIs and professionals already teaching or who plan to teach culinary courses.

The program offers Research and Statistics courses which are necessary for those who aim to make Education their profession. There are diverse and advanced culinary courses included in the program making the graduates more qualified and competitive among peers in the culinary field of specialization both in the industry as well as in education and training.

Master of Science in Hotel and Restaurant Management

The program hones the students’ skills producing higher competence in the management of Hotels, Food and Beverage establishments as well as other related enterprises. The program also prepares the students to become good educators for faculty and leadership positions in schools offering courses in hospitality.

With subjects such as Advance Hospitality Perspectives, Food Service Systems, Strategic Management, Human Resource and Marketing Management, Advanced Nutrition, Advanced Menu Management and Event Management; graduates of this program will have a higher grasp of how systems management works in hospitality organizations making them potential industry leaders.

Doctor in Hospitality Management

As the global hospitality industry grows, there is an increasing demand for highly competitive hospitality professionals. This program provides all industry and academe practitioners an advanced learning in business management specializing in the hospitality industry. It aims to intensify their proficiency to appropriately respond to evolving industry requirements. It integrates into the program the core competency in hospitality management complemented by advanced management courses through practical applications of theories and in-depth research. The completion of the program requires a dissertation on the field of hospitality management.

The Bachelor of Science in Hospitality Management finds its roots in the establishment of the Philippine School of Nutrition and Food Science and Technology known as the PINFST with Dr. Ignacio S. Pablo as the Director. PINFST included three professional baccalaureate programs, the BS in Foods and Nutrition, BS Food Science and Technology and BS in Institutional Food Administration. The latter became the springboard for the present School of Hospitality Management (SHM) with its own specializations in Hotel and Restaurant Management (HRM), Culinary Management (CM) and Cruise Lines Operations Management (CLOM) in response to the increasing demand for professionals in the industry. It was given Department of Education and Sports (DECS) recognition on 1981, Philippine Association of Colleges and Universities Commission on Accreditation (PACUCOA) Level 1 progressing to Level II accreditation.

True to its original mission of responding to the needs of not only the industry but other stakeholders, the SHM programs have responded to new challenges, aligning with the country’s educational reforms of enabling the youth to acquire lifelong learning and ensuring that graduates have the necessary competencies to work amidst the continuous challenges of the workplace brought about by society’s needs today, globalization and technology. It has since imbedded ladderized course offerings to allow exit points where students can work and come back for more studies. At present the program is instituting changes for further quality assurance by adopting the outcomes-based approach to education mandated by Commission on Higher Education (CHED). The program has produced approximate 7,000 graduates that have significantly filled up the manpower requirements of industries related to commercial hotels and restaurants as well as institutional accommodations and food services in the broader sectors of society.

I wish to welcome each and every student and esteemed faculty member to the School of Hospitality Management, our second “home”!

The Philippine Women’s University, delivering quality hospitality education in the last three to four decades and as an Institution of higher education and learning, is celebrating our 100 years of existence. Our “home” has produced 7,000 hospitality management graduates who assumed various key positions at different levels in the industry, academe and business world, that anchors School of Hospitality Management’s vision, mission and core values. PWU was one of the pioneering schools that offered a Hotel and Restaurant Management program in the country and its continuous innovation in teaching pedagogy, classroom innovations and methodologies has contributed substantially to the growth and development of the hospitality industry.

In the next few years, you will join these distinguished men and women who are successful movers and leaders in the industry and the academe. The Risk Management Practices of Hotels in Pangasinan, Philippines

The study aimed to determine the risk management practices implemented by selected hotels in Pangasinan, Philippines with the end view of improving the operations of the hotel industry in the province. The study focused on determining the extent of risk management practices by the selected hotels in Pangasinan along with the areas of operational risk, legal and compliance risk, strategic risk, and reputational risk. The study also dealt with the implementation constraints which are linked with the perceptions of the groups of respondents in the purview of providing a baseline reference for the risk management model. The descriptive method was used in this study which is the most popular approach used in the research project. In particular, a descriptive survey was used. It is a fact-finding study used to collect demographic data about people's behavior, practices, intentions, beliefs, attitudes, opinions, and perceptions (Dones, 2011). It uses a questionnaire to generate data prepared by the researcher (Ariola, 2014).In summation, the degree of implementation of risk management on operational, legal and compliance, strategic and reputation was not successfully practiced. The risk management practices when properly implemented will enhance the operation and increase the assets of the firms.

Filipino Hospitality, A Look Back to Its Origin

Filipino Hospitality, Myth or Truth?

In this day and age, Filipino hospitality is sometimes perceived as a myth to promote the Philippine tourism or that the unusual kindness is just an act, full of insincerity and sycophancy in order to get something in return. This may be true in the eyes of people who don’t understand the origin of this trait that best describe the Filipinos among other nationalities.

Filipino Hospitality in History

A well-recognized Philippine historian, Teodoro A. Agoncillo, mentioned in his book, History of the Filipino People, that hospitality and most Filipino traits were acquired from the Malayan traditions.

Origin of hospitality industry in the Philippines

The Malays, led by the sovereignty of a Datu, were known as the first to migrate and inhabit the Southern regions of the country; long before Ferdinand Magellan discovered the Philippines. It is in the small communities called barangays where most of the core traits of the Filipinos had developed.

This noble intention can be perceived negatively by others in some cases. The most common misconception of the Filipino hospitality is the thought that Filipinos are putting their guests, particularly the foreigners up on the pedestal because of inferiority and servility. The best example of this was when the Spaniards first step foot on the country.

In the contrary, the truth behind Filipino hospitality is the thought that no guest or visitor should get harm under one’s roof as Filipinos values the utmost loyalty of a friend to the extent that friends are treated as family. They also have a high regard to their family name and reputation that any reasons to be shunned by society is something to be avoided.

Filipino Hospitality in Families

Filipino hospitality knows no bounds whether you’re a foreigner or a fellow Filipino and being sensitive to the needs of a house guest knows no socio-economic status. If visitors come unannounced after meal time in any Filipino home, expect some snacks and drinks to be served.

Also, if a relative or a family friend will have to stay for the night, the most comfortable room and bed will be provided even if it means that some members of the family will have to share a bed for that evening. On the other hand, a typical Filipino visitor has always some sort of token or presents to offer the host whether it’s in a form delicacy or a new gadget from overseas. It is merely a small gesture of gratitude for accommodating them in spite of short or no notice at all and not because of anything else. So in actuality, Filipino hospitality goes both ways whether you are a visitor or if you are the visited. Very good to know whenever dropping by and you can expect to make friends quickly in this beautiful country.
